I won’t lie, this Chicken with Cream Cheese Sauce recipe may induce inappropriate behavior at the dinner table.  The first time I made this dish, my kids were licking their plates clean!  I had to warn them that it was inappropriate to do that in public or when they were a guest in someone else’s house.  But we were at home and what the heck, right?

But, really, it is that good! 

It sure sounds fancy, too…”chicken with cream cheese sauce.”  But it really couldn’t be easier to make.  Who knew eating “gourmet” could be so simple?

How Do You Make the Chicken?

My recipe includes the following 5 ingredients for the chicken:

You can make this recipe with either boneless chicken breasts or thighs.  It really doesn’t matter, since you chop the meat up into bite sized chunks.  You CAN bake the chicken in larger pieces, but I generally pre-cut most of the meat I serve on the front end of cooking, so that I don’t have to do any cutting on the back end of serving x 4 kids!

To make this dish, it’s as easy as placing the chicken in a baking dish, sprinkling it with some salt and garlic powder and topping it with some butter.  Bake the chicken, until done.  You can even bake it at the same time as the side vegetable, if you’ve planned it right!  I usually serve this with Roasted Garlic Cabbage or Sautéed Spinach.   

Meanwhile, you can fry the capers in some butter in a small skillet and make the sauce.

If you’ve never had capers before, they are really delicious!  These are immature flower buds from the “caper” bush, known as Capparis spinosa, which grow all over the Mediterranean.  You can think of capers as being similar to green olives. They are a bit salty and add a bright, briny burst of flavor to savory dishes like this one. 

It’s all in the sauce!

Although the chicken, by itself, is delicious.  What makes this dish especially tasty is the creamy sauce!  You’ll need the following 5 ingredients to make the cream sauce:

This sauce is so simple, yet amazing!  My only complaint in making it is that the cream cheese never really melts into the whipping cream the way I’d like.  So, it’s always been necessary for me to use my immersion blender to combine everything into a smooth sauce.  You could also use an electric hand mixer, if you don’t have an immersion blender.  But the immersion blender is much easier to use and clean.

Once everything is done, you simply need to assemble everything on your plate and serve.  I start by putting cooked cabbage or spinach on each plate.  I top the vegetables with chicken and capers.  Finally, pour on the delicious cream sauce and serve!

  • Preheat oven to 375°F.
  • Place cubed chicken in a small baking dish. Sprinkle with ¼ tsp of salt and ¼ tsp of garlic powder. Top with 2 Tbsp of butter in small chunks.
  • Bake chicken for 25 minutes.
  • Meanwhile, combine cream cheese, heavy whipping cream, ¼ tsp of salt, ¼ tsp of garlic powder and coconut aminos in a small saucepan.
  • Stir the sauce occasionally and bring to a slight boil. Lower heat and simmer until the sauce has thickened, or about 10 minutes.
  • Tip: Cool the sauce slightly and use an immersion blender or hand mixer to blend the cream cheese into the sauce, if it has not fully combined.
  • In a small skillet, melt the remaining 1 Tbsp of butter over medium-high heat. Fry the capers until they are crispy.
  • Serve the chicken over Roasted Garlic Cabbage or Sauteed Spinach. Top with capers and cream cheese sauce.

Notes

Tip:  This dish freezes well, so I often make a double batch of this recipe.  For the portion I plan to freeze, I layer the cabbage, chicken and capers in a casserole dish.  I top the casserole with cream cheese sauce and add an air-tight lid and a label.  The dish can then be frozen and saved for a busy weeknight, when “fast food” is needed!
