Whipped Cream Cheese Frosting

Prior to switching to a ketogenic diet, I always bought frosting from the grocery store.  It wasn’t until about a year ago that I decided to try my hand at making my own batch.  Although I understand that all things in moderation are generally accepted as OK to eat, I found myself feeling sick after eating commercially prepared foods. 

And I wasn’t alone.    

In fact, everyone in my household would complain of tummy aches after eating too much gluten or sugar.  So, I set out to make a sugar-free frosting.  And I am SO glad I did!  It is really easy to make and tastes so much better!  Really, you have got to try this for yourself.

What’s In It?

You will only need the following 4 ingredients to make this whipped cream cheese frosting:

A lot of recipes tell you to cream the butter and cream cheese together first.  However, I don’t really see the point in that.  I just add all of the ingredients in a large mixing bowl and blend them together with an electric mixer.  It is really as easy as that.  And it seems to turn out the same, whether you mix everything in steps or all at once.

Dairy-Free?

Looking at the ingredients, one might wonder how there could possibly be a diary-free option.  But there is, actually! 

Instead of dairy cream cheese, you could use Kite Hill’s Almond Cream Cheese, instead.  You could also use softened coconut oil, in place of butter.  It will have a slightly different consistency, but will still be delicious.

I made this dairy-free frosting for a friend of mine who has a dairy-free diet and it turned out wonderful.  I would, however, recommend adding 1 teaspoon of additional vanilla extract or almond extract and a bit more sweetener to taste, since the almond cream cheese does taste a bit different from regular dairy cream cheese.

Natural Dyes

Now, if you want to get fancy, you could add food coloring to your frosting.  This was a challenge for me, since we try to eat as natural as possible in our household.  However, when my children came to me and requested colored frosting, I was perplexed! 

The “natural” food colorings sold in the stores just don’t seem to color the frosting the way I’d like.  And they are really expensive, on top of it! 

After searching the internet, I luckily came upon this wonderful website that guides you through How to Make All-Natural Food-Dyes from scratch, right in your kitchen.  It takes a little bit of time, but its well worth it if you are avoiding chemicals!  And it was so fun to do with my children.  So far, we have made pink raspberry frosting, orange carrot frosting and purple blueberry frosting.  We even made Matcha Green Tea vanilla ice cream once.  They were all delicious!    

If you are thinking about making your own whipped cream cheese frosting, but you’ve been afraid to try, don’t be!  It is really simple to do and doesn’t take much time.  In fact, you’ll be missing out, if you don’t!  And as a bonus, if you make too much, it freezes really well.  So, give it a shot…I dare you!

Ingredients
  

  • 12 Ounces Cream Cheese, softened
  • 4 Ounces Butter, softened
  • ½ Cup Powdered Monk Fruit **
  • 2 Tsp Vanilla Extract

Instructions
 

  • Place all ingredients (cream cheese, butter, vanilla and powdered monk fruit) in a large bowl. Combine until light and fluffy using an electric hand mixer.
  • Frost cupcakes or cake immediately, or refrigerate until ready to use. Beat with a hand mixer until light and fluffy before using.

Notes

Tip:  Freeze unused portions for up to 1 year.

** If you do not care for monk fruit sweetener and are following a more traditional diet, honey makes an excellent replacement for monk fruit.  Use 1/3 cup to 1/2 cup of honey in place of 1/2 cup of monk fruit sweetener.
