During the late summer months, tomatoes, peppers, and fresh herbs are plentiful.  And what better way to utilize this fresh harvest, than to make a delicious batch of salsa fresca.  Especially when you have more tomatoes than you know what to do with!

Salsa has been around for a long time!  In fact, it’s roots can be traced all the way back to the Aztec’s.  The name “salsa” means “sauce” and many, many variations of this “sauce” can be found today.  There’s salsa rojo, salsa verde, picante, salsa cruda, and, of course, salsa fresca, just to name a few!

Salsa fresca literally means “fresh sauce” and uses uncooked ingredients.  It is also known as “Pica de Gallo.”  It differs from many of the salsas that we are used to, since they include canned tomatoes in their ingredients.  This salsa fresca recipe uses only fresh ingredients and results in a healthy, fresh, and crisp “sauce” that you’ll surely love!

Salsa Fresca Ingredients

Salsa fresca is very easy to make, as you will only need the following 8 ingredients:

Once you have gathered all of the ingredients, it is really just a matter of dicing up the tomato, onion, peppers and avocado (if using), tossing them in a bowl and adding all of the remaining ingredients.  Give it a stir and refrigerate for a few hours or overnight to allow the flavors to combine before serving.   

If you want to be sure that your salsa does not become too watery, remove the seeds from the tomatoes before dicing them and only add the flesh to your recipe.

Also, when handling hot peppers, like jalapeños or chilies, be sure to wear gloves.  I found this out the hard way!  The juices of hot peppers stick to your skin and you DO NOT want to find out how painful it is when you touch your hand to your eye, a wound, or any other tender area with those hands afterwards!  I have forgotten to wear gloves on occasion and have felt my hands burning for hours afterwards.  Wear rubber gloves!

Ways to Use Salsa Fresca

Of course, salsa fresca is delicious served plain with your favorite corn chips or Grain-Free Tortilla Chips.  But it also makes a great addition to your favorite Mexican dish.  It can be served over tacos, salads, eggs, or a Southwestern Chicken dish, too!  Try serving it over fish to zip up your dinner.  It would be tasty served on a lettuce wrap with turkey for lunch.  The possibilities are endless!

How Long Will Salsa Fresca Stay Fresh?

Since the salt and lime juice act as a natural preservative, this salsa should last in your refrigerator for up to one week.  However, it will probably not last that long, since it’s too good to not eat! 

Salsa should be eaten relatively soon, though, since it is made of all-natural ingredients.  I would not recommend freezing salsa since it is made with oils and other ingredients that have a high-water content.  It would be a watery mess upon defrosting! 

If you want to make salsa last longer than a week, you may want to consider canning it.  Otherwise, just put an airtight lid on the bowl and refrigerate it until ready to eat.

Ingredients
  

  • 1 Pound Tomatoes, seeded & diced
  • 1-2 Chilies or Jalapenos, seeded & diced
  • ¼ Onion (Red or Yellow), diced
  • 4-6 Garlic Cloves, minced
  • ¼ Cup Cilantro, chopped (1 small bunch)
  • 2 Tbsp Lime Juice
  • ¾ Tsp Himalayan Pink Salt
  • ¼ Cup Avocado Oil
  • 1 Avocado, diced (Optional)

Instructions
 

  • Chop all ingredients into small pieces.
  • Place all ingredients into a medium sized bowl.
  • Stir to combine.

Notes

Tip:  To prevent your salsa from becoming too watery, remove the seeds from the tomatoes and only add the diced flesh of the tomato to the salsa.   
 
Tip:  Wear rubber gloves to remove the seeds from chilies or jalapeno peppers and dice to avoid burning your hands and eyes.
